
1 large leek, white only, chopped (about 1 cup)
1 potato
Butter and oil (at least 1 tbsp)
2 cups of vegetable stock
Black pepper to taste
Cook leeks in butter and oil for a few minutes. Add the rest of the ingredients. Bring to a boil and simmer for 15 minutes. Take off the stove and blend with a hand-blender.
