
1 sweet potato, in cubes (about 1 cup)
1 cup of frozen corn
Butter and oil (at least 1 tbsp)
1 small onions, chopped
2 cups of vegetable stock
1/2 tsp cumin
1/3 cup coconut milk
Black pepper to taste
Cook onions in butter and oil for a few minutes. Add the rest of the ingredients. Bring to a boil and simmer for 10-15 minutes. Take off the stove and blend with a hand-blender.
